Why is milk temperature important?

Experienced baristas develop a feel for how long they need to steam milk. But a frothing thermometer eliminates guesswork and guarantees consistent results. The ideal temperature range for milk that is to be added to coffees is 60℃ (140℉) - 70℃ (160℉). Milk boasts a lower boiling point than water and so it is easy to overheat milk and destroy its natural sweetness. Why else would you need thermometers?
